Baigan Bharta Recipe:
Preparation Time: 20 Minutes
Cooking Time: 15 Minutes
Serve:3
Ingredients:
Baingan/ Egg Plan: One Big Size
Onion: 2 small, Chopped
Tomato: 2 medium sizes, chopped
Garlic: chopped: 7-8
Ginger: 2 Inch, Grated
Green Chilli: 2, split
Fennel Seeds: 1/2 tsp
Red Chilli: 1/3rd tsp
Turmeric Powder: 1/2 tsp
Cumin seeds: 1/3 tsp
Lemmon Juice: 1/2 tsp
Salt: 1/2 tsp
Oil: 3 tbsp
Coriander leaves: For Garnishing
Steps:
Wash and make the incision in eggplant and put garlic cloves inside. Roast it on the Gas stove on low flame. Once a side of the egg plan is properly cooked, turn it. Likewise all the sides. it takes 10-15 minutes to cook on low flame. Once it is fully roasted, wait for it to cool down, now peel off the skin, and mesh well.
Heat a pan add oil. Now add fennel seeds to it, add cumin seeds, green chili, grated ginger, chopped garlic, and chopped onion. Fry all on medium flame. After a minute, add chopped tomatoes. Fry all until tomato gets mashy. At this stage, add turmeric powder, red chili powder, salt, stir all. Now add eggplant to the gravy, fry all for at least two minutes. Add lemon juice and garnish with coriander leaves. Serve hot with dal and chapati.
