Pav Bhaji
Preparation Time: 20 Minutes
Cooking Time 25 Minutes
Serve: 4
Ingredients:
Boiled potato: 2 Medium size
Green Peas: 1 small bowl
Carrot: 2 medium size
Brinjal: one small
Capsicum: 1 small, chopped
Onion: 2 medium size
Tomato: 3, medium size
Ginger: 1 inch
Lemon juice: 1tsp
Garlic: 6-7 cloves
Turmeric powder: ½ tsp
Red chilli powder: 1/3 tsp
Coriander powder: ½ tsp
Pao Bhaji Masala: 2 tsp
Oil +Butter: 4 tbsp
Salt: ½ tsp
Water: 400 ml
Coriander leaves for garnishing
Steps:
Boil potatoes in one pot. In another pot boil pes, carrot, and brinjal.
Mash the potatoes, keep the other vegetables aside.
Heat a heavy base pan. Add oil plus butter to it. Add ginger and garlic into the pan.
Add chopped onion and fry for a minute.
Add coriander powder, Turmeric powder, red chilli powder, garam masala. Add chopped tomatoes, fry all until in gets mashy. Add pav bhaji masala and half tsp of salt, mix well
Add all vegetables, fry for a minute. Add potatoes to the gravy and mix well, cook for 2-3 minutes, keep stirring. Add lemon juice. Stir continuously for 5 minutes.
Garnish with coriander leaves and serve hot with pav.
