Sambar, also spelled sambhar, is a lentil-based vegetable stew or chowder, cooked with dal and tamarind broth. It is popular in South Indian and Sri Lankan cuisines. In this video, sambar is made with toor or arhar dal.

Toor Dal: 1 medium bowl (100 Gms)
Vegetables: Mix- One Medium Bowl
Turmeric Powder: 1/3 tsp
Sambhar Masala: 3tsp
Mustard Seeds: One and half tsp
Tamarind (Imli) water: 3 tsp
Curry Leaves: 10-12
Whole Red Chilli: One
Salt: 1 tsp
Sugar: ½ tsp
Hing: 1/3 tsp
Oil 3 tsp
Desi Ghee: 2tsp
Water: 500 ml
Steps:
Soak Toor dal in water for 15 minutes. Strain completely.
Cook Dal in 300 ml water with half tsp of salt and 1/3 tsp turmeric powder for five minutes on medium flame.
Cut all vegetables and keep aside. Heat 3 tsp oil in a pan, add hing, mustard seeds, curry leaves. Add all vegetables and mix well. Add 3 tsp sambhar masala. 100 ml water and cook for 5-7 minutes on medium flame.
Add boiled dal to the pan, add tamarind water, salt, and 100 ml of water. Mix well. Cover the lid, cook for 10 minutes on low flame. You may add half tsp of sugar.
Take tadka pan. Add ghee, dry red chilli, mustard seeds, and curry leaves. Let them crackle and add the tadka to the sambhar.
Your Sambar is ready.
